For extended time in cold conditions, a wool or thermal boot sock worn with any waterproof boot will make a significant difference to warmth without needing a specialist winter boot.

Quebec is Bareback's flagship waterproof country boot, available in four distinct styles: pull-on mid-calf, pull-on ankle, zip ankle and zip mid-calf — plus a wool-lined zip version for winter. All share the same waterproof construction; the differences are height and closure. Pull-on versions are quicker on and off; zip versions give a closer, adjustable fit. The mid-calf versions are available in standard and wide calf in Black and Brown, with Chestnut in the pull-on mid-calf (UK 11–12); the ankle versions are a standard ankle fit.

What does "not recommended for high instep" mean for the Ottawa Storm?

Both the Ottawa Storm and Chatsworth Storm are noted in their product descriptions as not recommended for those with a high instep. The way the opening is structured means people with a prominent instep may find it difficult to get the boot on. If you have a high instep, the Quebec pull-on or Hudson Storm are better alternatives.
